Christmas Protein Sugar Cookie Bars
These sugar cookie bars are a soft, delicious holiday treat!

Ingredients
2 cups (224g) ground almond flour
1/3 cup (67g) sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 large (100g) egg
1/4 cup (56g) coconut oil
1/4 cup (63g) plain nonfat Greek yogurt
1 1/4 teaspoons (5g) vanilla extract (divided)
4 ounces (112g) cream cheese (softened)
1/2 scoop (16g) "Optimum Nutrition" whey protein powder, flavor of choice
3 teaspoons (15g) unsweetened almond milk
Directions
Preheat your oven to 325 degrees F and line a square 9-inch x 9-inch baking dish with parchment paper.
Whisk together the almond flour, sugar, baking powder, and salt.
Add in the eggs, coconut oil, Greek yogurt & 1 teaspoon vanilla extract. Mix until smooth (it will be a thick batter).
Spread the batter evenly in your baking dish. Bake for 20 to 25 minutes. The center should be puffed up and the edges should be golden. Cool completely.
In the meantime, make your frosting. In a small bowl, combine the softened cream cheese, protein powder, remaining ¼ teaspoon vanilla extract, and 2 teaspoons of almond milk. Add another teaspoon of milk, as needed , until you get your desired frosting consistency.
Spread the frosting over the cooled bars and add decorative sprinkles, if desired. Refrigerate for at least 30 minutes. Slice into 16 squares & enjoy!
Notes
Consider varying your protein powder flavor to chocolate, cinnamon, or chai for exciting new combos.
